Join us for a hands-on culinary experience with Oichi Shoten, a long-established seaside wholesaler specializing in iriko (dried sardines) and chirimen (whitebait). Learn fascinating facts about sardines, taste-test different iriko broths, and watch a live demonstration on how to make authentic dashi.

We’ll then use dashi to prepare simple, home-style Japanese dishes and enjoy a flavorful lunch served in beautiful Hagi yaki pottery made by Ooyagama Ceramics. The menu for the day includes dashi-cooked rice, warm somen noodles with side dishes, and coffee to finish. Even if you usually rely on instant dashi granules or store-bought soup stock, this is a perfect opportunity to explore traditional flavors!

The event will be held at Ooyagama Ceramics, inside their recently renovated shop. The space was originally the kiln’s workshop, and you can still spot traces of its history throughout—a perfect blend of tradition, flavor, and hands-on fun.

A coastal seafood wholesaler based in Hagi, Oichi Shoten is the only company in the area authorized to purchase and sell locally caught and processed chirimen (whitebait) and niboshi (dried sardines), which are also their main products.

The coastal seafood wholesaler Oichi Shoten was founded in 1946 by its founder, Ichizo Oshima, who named the company using the initials of his own name. Originally located near the port in Hamasaki, the company is now based in Tamae.
At Oichi Shoten, we pride ourselves on selecting only the finest products, using all five senses—sight, touch, smell, sound, and taste—combined with years of knowledge and experience.
Our main products, “Setsuki Chirimen” and “Taberu Kozakana” (tiny dried fish snacks) are carefully prepared by experienced factory staff, ensuring safety, quality, and meticulous attention to detail.
From the main house on the grounds of Ooyagama Ceramics, you can enjoy a beautiful view of Mt. Shizukiyama, one of Hagi’s most iconic landmarks.
