Join us for a hands-on culinary experience with Oichi Shoten, a long-established seaside wholesaler specializing in iriko (dried sardines) and chirimen (whitebait). Learn fascinating facts about sardines, taste-test different iriko broths, and watch a live demonstration on how to make authentic dashi.
We’ll then use dashi to prepare simple, home-style Japanese dishes and enjoy a flavorful lunch served in beautiful Hagi yaki pottery made by Ooyagama Ceramics. The menu for the day includes dashi-cooked rice, warm somen noodles with side dishes, and coffee to finish. Even if you usually rely on instant dashi granules or store-bought soup stock, this is a perfect opportunity to explore traditional flavors!
The event will be held at Ooyagama Ceramics, inside their recently renovated shop. The space was originally the kiln’s workshop, and you can still spot traces of its history throughout—a perfect blend of tradition, flavor, and hands-on fun.
