This workshop introduces a creative way to use sake lees—a nutrient-rich, solid paste created as a byproduct of the sake-brewing process—in your daily life. Hagi’s rich volcanic soils, formed by the Abu volcano group, have nurtured premium sake rice for generations, establishing Hagi as a center for high-quality sake production. Even today, Hagi’s local sake is widely cherished.

Local Sake Lees
In Hagi, the fertile volcanic earth of the Abu volcano group provides the perfect conditions for growing premium sake rice. As a major sake consumption area, Hagi has long established a foundation for high-quality sake production. Today, Hagi’s sake remains widely loved, and the region’s sake has been designated a Geographical Indication (GI Hagi) by the Japanese National Tax Agency.
